Mistake

A couple weeks ago I posted a Chocolate Cream Pie that I made by mistake on Instagram. I was trying to make my Rich, Smooth and Divine Chocolate Tart with a biscuit base but I got my measurements all wrong and the tart only looked half full. I decided to whip some cream to fill it up and it turned out to be a delicious mistake.

That weekend I went shopping and Terry’s Chocolate Orange had just landed on the shop floor by the pallet load, I saw them and knew I had to make a Terry’s Chocolate Orange Tart. You know Christmas has arrived when Terry’s Chocolate Orange hit’s the shelf. I used to get one every Christmas and the smell and taste evoke the most wonderful childhood memories.

I’d purchased all the ingredients for a chocolate orange tart but didn’t get round to making it. The week after we decided to take a day off and head to London for the day. We had a wander around the wonder that is Borough Market. My brain was buzzing with inspiration and mouth drooling from the incredible aromas of wild mushrooms, cheese, chocolate, bread and food vendors.

I stumbled on a couple of gems and purchased some cheese, olives and spices. It was a store called Spice Mountain that got me really excited, so many herbs and spices, I was like a kid in a candy shop. From there I purchased the most fragrant Green Cardamom and was inspired to make my Terry’s Chocolate Orange and Cardamom Tart the day after we got home.

A Love Letter To My Mum

My Terry’s Chocolate Orange and Cardamom Tart was created from my Rich, Smooth and Divine Chocolate Tart. My Chocolate Tart was my mum’s favourite. A few Valentines ago I shared this recipe in a love letter I wrote for my mum. Going into Christmas without her is still hard, even after 8 years.

So with this recipe I’m celebrating her and all the wonderful Christmas memories she gave me. Sharing it with you, and seeing your enjoyment, fills me with joy and is the best Christmas present I could wish for. I wish you and your families a safe and happy Christmas.

I know it’s a little early to be thinking of Christmas but it will be here before you know it. Last year I saw Christmas decorations go up as soon as the Halloween decorations came down. With the last couple of years we’ve all had, I don’t blame you having more festive celebrations this year.

I can hear some of you asking if Cardamom is essential in this recipe. The flavours really do complement each other and the amount of cardamom in this recipe is subtle. You can make it without the cardamom but as the wise Olaf once said “Chocolate, Orange and Cardamom are so intense, put ’em together it just makes sense’.

Ingredients

Biscuit Base

  • 240 g digestive biscuits crushed (breadcrumb consistency)
  • 100 g unsalted butter melted

Terry's Chocolate Orange and Cardamom Filling

  • 150 ml double cream
  • 5 g caster sugar
  • 1 pinch sea salt
  • 50 g unsalted butter cubed at room temperature
  • 100 g 74% dark chocolate broken into pieces
  • 150 g Terry's Chocolate Orange (milk chocolate) broken into pieces
  • Seeds from 8 green cardamom pods finely ground using a mortar and pestle (optional)
  • 40 ml semi-skimmed milk
  • Double cream to serve

Instructions

Biscuit Base

  • Line the base of a 23cm loose base flan tin with baking paper.
  • Mix the melted butter into the biscuit crumbs and tip into the prepared tin. Use the back of a spoon to press down the mixture to create an even base. Press the mixture up the sides to create the tart case. You need the wall of the tart case to come about 3/4's the way up the side of the tin. Take time to create an even tart case. Place in the fridge.

Terry's Chocolate Orange and Cardamom Filling

  • Meanwhile gradually heat the double cream, ground cardamom seeds, sugar and salt in a pan over a medium-low heat. Stir frequently with a wooden spoon.
  • Remove from the heat when the cream starts to bubble around the edges. Stir in the butter, chocolate and cardamom until melted.
  • Pour in the milk and gently stir through until smooth and glossy. 
  • Tip the gooey chocolate mixture into the tart case. Chill in the fridge for 2 hours until the chocolate mixture has set.
  • Remove the tart from the fridge 20 minutes before serving. Remove the tart from the tin and serve on a plate or wooden board. Slice and serve with a drizzle of double cream or berries.

You can leave out the cardamom if you wish.
